Chickpea Salad with Smashed Cucumbers:

This vegetable-rich recipe is full of mouthwatering tastes and crunchy textures, making it the ideal healthy side dish or quick summer salad you can eat all year long. This salad is crunchy, fresh, and packed with protein, so it should absolutely be on your family's supper plan. It is the ideal make-ahead supper because it also stores well in the refrigerator.

This energising salad is loaded with delicious vegetables like red onion, crisp cucumbers, and sweet cherry tomatoes. Jalapeno bits offer some extra spiciness, and the herb and lemon dressing ties everything together. It is advised that you marinate all of your delectable vegetables in the dressing for at least 10 minutes, but don't worry if you give it longer! The rich, vibrant flavours meld together more as everything settles for a while. If you doubt the filling power of salads, one can also add the protein powerhouse: chickpeas. They not only enhance the flavour but also provide a significant amount of protein and fibre, making this salad savoury, filling, and healthy.

With no preparation necessary, this delicious salad is ready in under 30 minutes! Simply chop up all your vegetables (or prepare them in advance for a great make-ahead supper), combine them with the lemony, herbaceous dressing, and get ready to munch. Put some tangy feta on top for a match made in heaven, or serve it plain.
